Macarrones gratinados is a simple feel-good dish that anyone from adults to kids really enjoys. If you love mac and cheese, this Spanish twist to the dish really pumps it up a notch!
longaniza blanca (a white Spanish pork sausage)

First cook the macaroni in water with a bit of salt. When it is done cooking, drain, rinse with cold water, and set aside. Preheat the oven to 350ºF (180ºC).
Chop up the tomato, onion, and garlic. In a large pan on medium heat, add some oil and saute until the onion is translucent. Add the ground pork, and cook for several more minutes until it is done. Cut the chorizo and longaniza blanca into small slices and add to the pan. Next, add the cooked pasta, mixing everything well.
Transfer the pasta and the sauce to an oven safe dish and sprinkle the top with grated cheese. Broil in the oven for about 5 minutes, or until the cheese is nice and melted.
If you can’t find the same types of sausages used here, the great thing about this dish is that you can customize it easily….the bad thing is that it wouldn’t have that same Spanish flare. If you prefer a meatless version, it also works well filling it with any types of veggies you want.
